Joe made this yummy chicken with sauce this week. He said it was quick and easy, and I can attest to its tastiness.This would be good with pork too I think.
From Weight Watchers 5 Ingredient 15 minutes Winter 2009 cookbook:
4 chicken breasts
1/2 cup prechopped red onion
1/4 cup water
2 tbls balsamic vinegar
1/3 cup fig preserves
1/4 tsp Italian seasonings
1/4 tsp pepper
Pound chicken breasts to 1/2 in thickness, sprinkle with salt.
Heat a large skillet over medium-high heat. Coat with cooking spray. Saute onion for 3 mins. Add chicken, cook 7 mins each side. Remove from pan & keep warm.
Combine water and vinegar, add to pan, scraping to loosen brown bits. Reduce heat to medium, add preserves, italian seasoning, salt and pepper. Cook 1 min or until preserves melt, stirring constantly. Spoon sauce over chicken.
