Chipolte Chicken, Grilled Pineapple, Nectarine-Blackberry Salsa

This dinner was good, and pretty easy.  I’m glad I added the  salsa, as the couscous and chicken was a bit dry.  The pineapple was good- but I liked last weeks pineapple better.

Chipotle-Chicken Kebabs, from Weight Watchers Summer Issue:

Number of Servings:2
1/2 Cup plain fat-free yogurt
1 chipotle chile in adobo sauce, minced
1 large garlic clove, crushed
1 Teaspoon ground cumin
1/2 Teaspoon salt
1/4 Teaspoon pepper
1 1/2 Pounds skinless, boneless chicken breasts, cut into 1-inch cubes

Instructions:
• Combine first 6 ingredients in a small bowl, stirring with a whisk. Pour into a heavy-duty zip-top plastic bag. Add chicken; seal bag, and toss to coat. Marinate in refrigerator 1 to 2 hours, turning bag occasionally.
• Prepare grill.
• Thread chicken onto 4 (10-inch) metal skewers; place on grill rack coated with cooking spray. Grill 11 minutes or until done, turning once.

Sweet & Spicy Grilled Pineapple:

also from Weight Watchers
1 peeled and cored pineapple
1 1/2 Tablespoons pineapple juice
3 Tablespoons light brown sugar
1 Tablespoon adobo sauce from canned chipotle chiles
1. Prepare grill
2. Cut pineapple into 8 slices
3. Combine juive, sugar, and adobo sauce
4. Brush pineapple with mixture
5. Grill 3 mins or until brown, brushing with mixture

Nectarine-Blackberry Salsa- from Eating Well recipe for Chicken & Polenta

2 nectarines, halved and pitted
1 pint blackberries, coarsely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
Hot sauce to taste
1. Preheat grill to medium-high.
2.  Rub the cut sides of nectarine halves with  1 teaspoon oil.
3. Oil the grill rack (see Tip).  Grill the nectarines, turning occasionally, until tender, 6 to 8 minutes total.
4.Coarsely chop the nectarines.
4. Combine the chopped nectarines, blackberries, cilantro, lime juice, hot sauce and the remaining 1/4 teaspoon salt in a medium bowl.
served with couscous

Changes-

broiled everything instead of grilled
used cubed pineapple and threaded on skewers
chopped nectarines before broiling
