Pork Chops with Apricot Sauce

  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp ground ginger
  • 4 (4 oz) boneless center-cut loin pork chops 1.2 in thick
  • 2 tsp olive oil
  • 2 (15 0z) cans apricot halves in extra light syrup, undrained


  1. Combine spices and sprinkle over both sides of pork chops
  2. Heat oil in large nonstick skillet over medium-high heat
  3. Cook pork, about 3 mins each side or until done, remove from pan and keep warm
  4. Drain apricots reserving 1 cup of liquid
  5. Add 1/2 of liquid to pan, and cook 4-5 mins until mixture is reduced by half, scraping pan to loosen browned bits
  6. Reduce heat to medium, add remaining 1/2 cup liquid and apricots, cook 5 mins or until heated
  7. Serve apricot halves and syrup over pork

Serves 4, 6 pts per serving
